MALABAR EGG CURRY RECIPE

Malabar Egg Curry

INGREDIENTS

  • Eggs – 4 nos.
  • Tomatoes - 2 nos.
  • Cooking Oil - 1 tbsp
  • Onions - 3 nos. (medium)
  • Thick Coconut Milk - 1 cup
  • Ginger-Garlic Paste - 2 tsp
  • Salt - to taste
  • Garam Masala - 1/4 tsp
  • Green Chillies - 2 chillies
  • Curry Leaves – 2-4 leaves
  • Beevi's Chilli Powder - 1 tsp
  • Beevi's Turmeric Powder - 1/2 tsp
  • Beevi's Coriander Powder – 2-3 tsp

PREPARATION METHOD


Preparing Eggs for Malabar Egg Curry:

Bring water to boil and boil the eggs.

Once the eggs are boiled, keep them in cold water.

De-shell the eggs

Slice the eggs in an appropriate size and keep aside, for later use.


Preparing Onions & Tomatoes for Malabar Egg Curry:

Wash, clean and chop the onions.

Heat cooking oil in a pan and fry the chopped onions till the color changes.

Add the ginger-garlic paste along with appropriate quantities of the following powders:

  • Beevi's Chili Powder - 1 tsp
  • Beevi's Turmeric Powder - 1/2 tsp
  • Beevi's Coriander Powder – 2-3 tsp

Mix the onions and spices well to get spiced onions.

Stir for a few minutes and keep aside for later use.

Wash, clean and cut the tomatoes.

Cook the tomatoes.

Pour thick coconut milk and add the sliced eggs and bring it to a boil.

After a few minutes, add the green chillies and curry leaves.

Simmer the tomatoes and eggs on low.

Mix the tomatoes and spiced onions with the simmering tomatoes and eggs.

Cover the egg curry and simmer for 3-5 minutes.

Malabar Egg Curry is ready! Serve hot with appam, parotta or chappati.
